Cherry Syrup for Coffee, Matcha, Cocktails, & More

I’ve been making lots of fruit based syrup lately and been loving it! I came across these sweet cherries at the store and thought they’d be perfect for another syrup creation!

To make this syrup it’s very simple and only 3 ingredients. Sugar, water, and cherries! I think vanilla would be a great addition to this syrup as well. I didn’t add it but 1 tsp of vanilla extract would go perfectly! The only extra tool I needed was a cherry corer that I just purchased on Amazon.

(Double for larger batch)

1 cup stemmed/cores sweet cherries

1/2 cup water

1/2 cup sugar

1. Combine all ingredients in a sauce pan on medium heat.

2. Stir well until sugar dissolve then just stir frequently for 5-8 mins.

3. Cherries will start to soften, then you can mash them with a fork or masher.

4. Take off of heat and let cool for 15 mins or so.

5. Store in a sealed container in the fridge. Lasts about 2 weeks.

It’s not just about the incredible flavor; it’s also knowing exactly what goes into your drinks. My morning coffee has been utterly transformed! Forget those expensive coffee shop syrups. A spoonful of this homemade cherry syrup in my iced latte, and it’s pure bliss. It adds such a vibrant, fruity note without being overly sweet. I even experimented with a ‘cherry mocha’ by adding a little cocoa powder – absolutely divine! It's quickly become my go-to for a special cherry coffee syrup treat, and I’m already dreaming up new cherry syrup latte combinations. But where this cherry syrup really shines is in cocktails. I've been experimenting with so many ideas! Forget just a basic mixer; this can truly be the star of your drink. For a simple spritzer, I just mix it with sparkling water and a squeeze of lime. For cocktails, try a ‘Cherry Old Fashioned’ or a ‘Cherry Gin Fizz.’ It’s fantastic in a whiskey sour, too. The possibilities for homemade cherry syrup for cocktails are endless. I’m thinking next of a ‘homemade cherry syrup for stranger things cocktail’ inspired drink – perhaps a cherry-infused rum concoction! One of the best parts about making your own syrup is how easily you can customize it. If you're using sweet cherries like I did, you get a lovely, mellow sweetness. But for a more intense ‘tart cherry syrup,’ you could easily swap out sweet for tart cherries. The flavor will be more vibrant and tangy, perfect for balancing sweeter drinks. I've also heard of people adding a tiny bit of almond extract, which really complements cherries. And don't forget vanilla, like I mentioned in the main recipe – it adds a warm, comforting layer. If you want a ‘black cherry syrup,’ you can use black cherries for a deeper color and richer flavor profile, giving you a slightly different taste experience. Remember to really take your time to 'De-stem & core cherries' properly before you start – it makes a huge difference in the final product. While the recipe is straightforward, don't rush the simmering process. You want the cherries to soften enough to be easily mashed. And after you 'Mash cherries with a fork' and let it cool, definitely 'Strain' it well for a clear, smooth syrup. This will give you that professional-looking finish. For storage, keeping it in a 'sealed container in the fridge' is key. I've found that while it says two weeks, mine sometimes lasts a bit longer if it's kept super airtight. Just keep an eye (and nose) on it! Beyond just drinks, I've even drizzled a little 'cherry syrup' over pancakes, yogurt, or ice cream. It's such a versatile ingredient to have on hand. And if you don't want to strain it completely, you can leave some of the fruit pulp for a 'cherry puree' effect, especially great for thicker smoothies or dessert toppings. It's a simple addition that brings so much homemade joy and flavor to countless dishes and beverages!
