Healthy Chocolate Chip Cookies

These soft and gooey (secretly) healthy chocolate chip cookies will blow your mind. They take 30 minutes to make—no chilling needed!

Ingredients needed:

1 ⅓ cups whole wheat flour, spooned and leveled

½ tsp baking soda

¼ tsp salt

1 large egg, room temperature

¾ cup coconut sugar

½ cup coconut oil, melted

1 tsp vanilla extract

1 cup chocolate chips or chunks, (I love dark chocolate but you can use sugar-free too)

Directions:

1. Preheat your oven to 350°F (175°C).

2. Mix the dry ingredients: In a medium bowl, whisk together the whole wheat flour, baking soda, and kosher salt.

3. Combine the wet ingredients: In a separate large bowl, whisk the coconut sugar, melted coconut oil, vanilla extract, and room-temperature egg until well combined.

4. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, using a rubber spatula, until just combined.

5. Add chocolate chips: Fold in the chocolate chips or chunks. DO NOT CHILL THE DOUGH.

6. Shape the cookies: Scoop 1.5 to 2 tablespoons of dough per cookie and gently roll into balls. If desired, press an extra chocolate chip or chunk on top of each dough ball for extra chocolatey goodness.

7. Bake: Place the dough balls on a parchment-lined baking sheet and bake for 8-10 minutes, or until the cookies are puffed and lightly golden on the bottom.

8. Cool: Let the cookies sit on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
