The Ultimate Shakshouka Recipe 🍳✨

This shakshouka with fresh tomatoes is perfect for a hearty breakfast or a light dinner. Bursting with flavors, it’s a must-try for Mediterranean diet enthusiasts!
Ingredients:
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 1 tbsp tomato paste
- 3-4 fresh tomatoes, chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp ground coriander
- 1 tbsp tomato paste (if needed)
- Salt and pepper to taste
- 4 large eggs
- Fresh parsley or cilantro, chopped (for garnish)
- Crumbled feta cheese (optional)
Instructions:
1. Heat the Olive Oil: In a large skillet, heat the olive oil over medium heat.
2. Cook the Onions: Add the chopped onion. Sauté for about 5-7 minutes, or until the onion is softened and translucent.
3. Add Garlic and Spices: Stir in the minced garlic, cumin, smoked paprika, and ground coriander. Cook for another 1-2 minutes until the spices are fragrant.
4. Add Tomato Paste: Add the tomato paste and let it cook for a minute or so while you stir it around.
5. Add Fresh Tomatoes: Add the chopped fresh tomatoes to the skillet. If the tomatoes are not very juicy, you can add the tomato paste. Season with salt and pepper. Simmer the mixture for about 15-20 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens.
6. Make Wells for Eggs: Using a spoon, create small wells in the tomato sauce. Crack an egg into each well.
6. Cook the Eggs: Reduce the heat to low. Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes. For firmer yolks, cook a few minutes longer. I prefer mine somewhere inbetween runny and fully set
7. Garnish and Serve: Sprinkle with chopped parsley or cilantro and crumbled feta cheese, if desired. Serve hot with crusty bread or pita for dipping.
