As a fellow student, I've learned a few tricks to make sure I'm fueled for success without compromising on taste or my wallet. It’s all about smart choices and making the most of what you have available, whether it’s a dorm microwave or a shared kitchen. For breakfast, I often lean towards something quick and packed with energy. While a beautiful Nutella acai bowl with sliced bananas, strawberries, shredded coconut, and a drizzle of Nutella is a fantastic treat, on most busy mornings, I opt for simpler, equally satisfying options. Think overnight oats prepped the night before – just mix oats, milk (dairy or non-dairy), chia seeds, and some fruit. Or a quick yogurt parfait with granola and berries. These are not only budget-friendly but also super easy to grab and eat on the go, perfect for those early classes. Lunch on campus can quickly become expensive, so I try to be strategic. While a slice of pepperoni pizza and a side salad is a classic, quick fix when I'm in a rush, I also love to pack my own lunches. Leftovers from dinner are a lifesaver! If I cook a big batch of pasta or a stir-fry, I'll portion it out for the next day. Another great option is a hearty sandwich or wrap with plenty of veggies, or a bean salad. These options keep me full and focused without draining my meal plan or my bank account. Always keep an eye out for campus events that offer free food – it’s more common than you think! When it comes to dinner, especially after a long day, convenience is key. This is where simple, one-pan meals or quick pasta dishes shine. I often cook with versatile ingredients like chicken breast, eggs, or canned beans. Tacos, pasta with a quick marinara sauce, or even a loaded baked potato can be incredibly satisfying and easy to whip up. And don't underestimate the power of frozen vegetables – they’re just as nutritious as fresh, and they drastically cut down on prep time and food waste. Snacks and social eating are also a big part of the college experience. When I'm studying late or just hanging out with friends, healthy snacks are essential. Instead of always reaching for chips, I try to have fruit, nuts, or Greek yogurt on hand.
