BISON STUFFED BELL PEPPERS 🫑

#lemon8challenge #lemon8badgehunt

We love a stuffed bell pepper! Next time try an exotic meat! Bison, Oxtail, Lamb (that would be so good), Elk or even a seafood! These stuffed bell peppers feature: BISON, ITALIAN BLEND CHEESE, ITALIAN SEASONED RICE, ONIONS, GARLIC AND CILANTRO (you can also use parsley! Or both) and of course TOMATO SAUCE… any marinara or pasta sauce will work also!

Throw these in the oven and enjoy with a nice side salad! This salad features: ARUGULA, CUCUMBER, JALAPEÑOS, GREEN ONION, LEMON & YOGURT as the dressing!

I wanted extra rice with mine because it was so good and also I made the bell pepper super meaty! Lots of meat, and it was soooo good! I also added some extra tomato sauce to the top of mine and garnished with cilantro!

Let me know what exotic meat or seafood you put in your bell peppers ❤️

... Read moreI’ve personally found that using bison as the main protein in stuffed bell peppers not only adds a rich, slightly sweet flavor but also offers a leaner alternative to traditional ground beef. The Italian blend cheese melts beautifully over the top, creating a perfect creamy texture that balances the savory seasoning of garlic, onions, and cilantro. When preparing the Italian seasoned rice, I like to toast the rice slightly before cooking to enhance its nutty flavor, which complements the bold taste of the bison. Adding both cilantro and parsley gives the dish a fresh herbal brightness that cuts through the richness of the meat and cheese. For tomato sauce, I recommend using a high-quality marinara, but experimenting with seafood-based sauces can introduce an interesting depth if you're feeling adventurous. The side salad with arugula, cucumber, jalapeños, and green onions tossed with a lemon and yogurt dressing adds the perfect refreshing contrast. The slight heat from the jalapeños paired with the cooling yogurt dressing makes each bite of pepper feel balanced and satisfying. If you want to get creative, substitute bison with other exotic meats like elk or lamb, which have their own unique flavor profiles. Seafood options, such as crab or shrimp, work surprisingly well too and provide a light, elegant alternative. This recipe is perfect for anyone looking to impress family or guests with a nutritious, hearty meal that’s both comforting and a bit exotic. Making the peppers ahead of time is easy and the leftovers reheat well, making this also a great option for meal prepping. I encourage you to adjust the seasoning and toppings based on your personal taste—maybe adding some smoked paprika or a dash of chili flakes for an extra kick.
