... Read moreLemon sourcream poundcake is a classic dessert loved for its moist texture and bright citrus flavor. Using ingredients such as lemon pudding mix and lemon emulsion enhances the lemony taste, making the cake fragrant and refreshing. The sourcream adds richness and tenderness to the crumb, preventing the cake from becoming dry even after baking for 90 minutes at 325°F. When preparing the batter, it's essential to alternate adding the flour mixture with the sourcream gently to avoid over-mixing, which can lead to a dense texture. Ensuring ingredients like eggs and butter are at room temperature helps them blend better, producing a light and fluffy batter. To elevate this poundcake, a lemon glaze made from powdered sugar, heavy cream, gel food coloring, and crushed yellow lemon Oreos is added. This not only provides a delicious finishing touch but also adds an appealing visual effect with the bright yellow color and Oreo crumble texture. For best results, using non-stick spray such as Pam Easy Release ensures the poundcake can be removed from the pan effortlessly without damage. Tapping the pan gently on the counter helps smooth the batter’s surface for even baking. This lemon sourcream poundcake pairs wonderfully with tea or coffee and makes a delightful treat for spring and summer gatherings. Experimenting with fresh lemon zest or substituting sourcream with Greek yogurt are also great ways to personalize this recipe. Overall, this poundcake balances sweetness and tang, delivering a satisfying homemade dessert experience.
