Crockpot Loaded Baked Potato Soup

Cozy, creamy, and full of comfort

Ingredients:

• 6 russet potatoes, peeled & diced

• 1 small yellow onion, diced

• 3 cloves garlic, minced

• 4 cups chicken broth

• 1 ½ tsp salt

• ½ tsp black pepper

• ½ tsp paprika (optional)

• 1 tsp dried parsley

• 1 cup sour cream

• 1 cup shredded cheddar cheese

• ½ cup heavy cream or milk

• 6 slices bacon, cooked & crumbled

• Green onions or chives for garnish

Instructions:

1. Add potatoes, onion, garlic, broth, and seasonings to the Crockpot.

2. Cook on low 6–8 hrs or high 3–4 hrs, until potatoes are soft.

3. Mash for chunky or blend for smooth texture.

4. Stir in sour cream, cheddar, and cream. Let warm 15–20 mins.

5. Serve topped with bacon, extra cheese, and green onions.
