My journey has taught me that healthy eating, especially with rice, can be super simple and delicious. One of the biggest questions I get is about “healthy carbs” in rice bowls. It’s all about making smart choices and portion control. Instead of always reaching for white rice, try incorporating brown rice or even quinoa (which I used in some of my bowls, like the Steak, Kimchi & Soft-Boiled Egg one!). They pack more fiber, keeping you fuller for longer. For weight loss, I usually stick to about a 1/2 cup to 3/4 cup of cooked rice per bowl. It’s enough to feel satisfied without overdoing it on calories. Remember, these are "healthy carbs meal" options because we're balancing them with plenty of protein and veggies! The beauty of these "simple weight loss meals" is how easy they are to prep. I’m all about saving time during the week! For example, I often do a big batch of rice or quinoa on Sunday. When it comes to proteins, I’ll marinate my beef, chicken thigh, or shrimp the night before, so they’re ready to cook quickly. Blanching asparagus or chopping broccoli and mushrooms ahead of time makes assembly a breeze. This way, whipping up a "lean steak rice bowl fitness meal" or a "scrambled egg rice bowl" takes minutes, not hours!
