*for a single serving i use 2 bell peppers*

1. wash and cut your bell peppers into chip sized pieces

2. cook your ground turkey (or chicken or beef) and season with taco seasoning. i use siete because of its clean ingredients!

3. sprinkle your COOKED meat, along with cheese, and any other toppings you’d like

4. bake in the oven at 350° until cheese is melted

5. serve on a plate and top with sour cream, salsa, sriracha, or whatever you prefer!!

I've found they give a surprisingly satisfying crunch, and the natural sweetness of the pepper perfectly balances the savory toppings. Plus, they make the dish so much more colorful and appealing – you feel like you're eating something indulgent, but it’s actually incredibly healthy and nutritious! When I'm making these, I almost always go for lean ground turkey or chicken. It's fantastic for keeping the protein high and calories low, which is key for feeling full and supporting muscle mass during weight loss. Sometimes, if I'm feeling adventurous or want a vegetarian option, I'll even use seasoned black beans or lentils.
