Churros With Duce de leche
INGREDIENTS
For the Cookies:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
For the Filling:
12 soft caramels, unwrapped (or homemade caramel if preferred)
For the Cinnamon-Sugar Coating:
1/4 cup granulated sugar
2 teaspoons ground cinnamon
DIRECTIONS
Step 1: Prepare the Dough
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Cover the dough and chill in the refrigerator for at least 30 minutes.
Step 2: Shape and Fill the Cookies
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Take about a tablespoon of dough and flatten it slightly in your hand. Place a caramel in the center and fold the dough around it, rolling it into a ball to enclose the caramel completely. Repeat with the remaining dough and caramels.
Step 3: Coat the Cookies
In a small bowl, mix together the granulated sugar and ground cinnamon. Roll each dough ball in the cinnamon-sugar mixture until fully coated. Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
Step 4: Bake the Cookies
Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set and the tops are just starting to crack. The cookies may look slightly underdone in the center, but they will continue to cook as they cool. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Okay, let's talk about these incredible churro cookies because they’ve become my new obsession! Seriously, if you love the idea of warm, cinnamon-sugar coated churros but dread the deep-frying, this recipe is your dream come true. I know the original recipe uses caramels, but I always opt for a gooey, creamy dulce de leche filling, just like the image shows—it makes these cookies absolutely irresistible. That rich caramel filling just melts in your mouth! What I adore about these is how easily you can whip up a batch. Unlike traditional churros that require a piping bag and hot oil, these cookies are so much more forgiving. You just mix, fill, roll, and bake! Perfect for a spontaneous baking session or when you need a quick, impressive dessert for guests. I often make the dough ahead of time and chill it for longer, even overnight, which really helps with handling and deepens the flavors. Now, about that dulce de leche! While store-bought is super convenient (and there are some excellent brands out there), you can easily make your own by slowly simmering a can of condensed milk. Just be careful and do your research on safe methods! The beauty of these cookies is that the dulce de leche provides that amazing, sweet, and slightly smoky flavor that pairs perfectly with the fragrant cinnamon-sugar coating. I love dusting them with a little extra powdered sugar right before serving, just like you see in some of those delicious churro pictures. Feeling adventurous? While the classic dulce de leche is a winner, don't hesitate to experiment with other fillings. A small square of dark chocolate, a dollop of Nutella, or even a spoonful of fruit jam can transform these cookies into something new and exciting. And if you’re thinking about the 'churros dipped in dulce de leche sauce' queries, why not serve these cookies with a small bowl of extra warm dulce de leche or a rich chocolate dipping sauce on the side? It elevates the experience and lets everyone customize their bite. These cookies are truly versatile. They’re amazing warm, straight from the oven, with a crispy exterior and a soft, chewy interior. Pair them with a scoop of vanilla bean ice cream for an ultimate dessert experience, or enjoy them simply with a cup of coffee or hot cocoa. They’re a fantastic way to capture that 'delicious churros' vibe without all the fuss. Whether you call them 'churros con dulce de leche' in cookie form or simply 'dulce de leche filled churro cookies,' they are guaranteed to be a crowd-pleaser and disappear fast!
