Easy Chicken Tikka

Ingredients:

For the Marinade:

• 4-6 chicken legs (drumsticks with thigh)

• 1 cup plain yogurt

• 3 tbsp lemon juice

• 1 tbsp ginger-garlic paste

• 1 tbsp shan chicken tikka masala

• 1 tbsp low sodium soya sauce

• 1 tbsp tomato paste

• Salt to taste

Instructions:

• In a large mixing bowl, combine the yogurt, lemon juice, ginger-garlic paste, chicken tikka masala , tomato paste and salt.Mix well until you have a smooth marinade.

• Make shallow slashes on each chicken leg with a sharp knife (this helps the marinade penetrate better).

• Coat the chicken legs in the marinade, making sure they are well-covered.

• Cover the bowl and refrigerate for at least 1 hour, or up to 4 hours for maximum flavor. You can even marinate overnight if you have the time.

Oven Baking

• Preheat your oven to 400°F (200°C).

• Place the marinated chicken legs on a baking tray lined with parchment paper or foil.

• Bake for 30-35 minutes, flipping halfway through. You can broil them for the last 5-7 minutes to get a crispy finish.

Pan-Frying:

• Heat 2 tbsp of vegetable oil in a large pan over medium heat.

• Add the marinated chicken legs and cook for 8-10 minutes on each side, until the chicken is fully cooked and slightly crispy on the outside.

• Once cooked, garnish with freshly chopped cilantro and serve with naan, basmati rice, or a side of fresh salad.
