Spicy Rigatoni

Ingredients:

• 12 oz rigatoni pasta

• 2 tablespoons olive oil

• 8 cloves garlic, minced

• 1 small onion chopped

• 1/2 teaspoon red pepper flakes (adjust to taste)

• 3 tablespoons tomatoe paste

• 1/4 cup heavy cream

• 1 tablespoon dried parsley

• 1/2 teaspoon sugar (to balance acidity)

• Salt and pepper, to taste

• Fresh basil or parsley, chopped (for garnish)

• Parmesan cheese, grated (optional)

Instructions:

Cook the pasta:

• Bring a large pot of salted water to a boil. Cook the rigatoni according to package instructions until al dente, about 9-11 minutes. Drain, reserving about 1/2 cup of pasta water.

Make the sauce:

• While the pasta cooks, heat the olive oil in a skillet over medium heat. Add the minced garlic and onion sauté until fragrant, about 1-2 minutes.

• Add the red pepper flakes and cook for another 30 seconds to release their heat.

• Stir in the tomatoes paste, sugar, and a pinch of salt and pepper. Let the sauce simmer for 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.

• Stir in the heavy cream and simmer for another 2-3 minutes until well combined.

Combine pasta and sauce:

• Add the cooked rigatoni to the sauce and toss to coat, adding reserved pasta water a little at a time if the sauce is too thick. Cook for another 1-2 minutes to let the pasta absorb some of the sauce.

Serve:

• Serve the spicy rigatoni and garnished with fresh basil or parsley. Top with grated Parmesan cheese, if desired.
