Read moreOMG, you guys, I just had to share this incredible dish I made last night! ✨ I've been wanting to try something a little fancy, and these seared scallops with vibrant orange sweet potato purée and black caviar totally hit the spot. It looks super gourmet, right? But honestly, it's not as hard as it seems, and the payoff is HUGE in terms of flavor and presentation. First off, getting those scallops perfectly seared is key. My little secret? Make sure they're completely dry before you even think about putting them in the pan. I pat them down with paper towels until they're bone dry. Then, a super hot skillet (cast iron works wonders!) with a tiny bit of high-smoke-point oil like avocado oil. Sear them for just 1.5-2 minutes per side until they have a beautiful golden crust. Don't overcrowd the pan, or they'll steam instead of sear! You want that caramelized exterior and a tender, slightly translucent interior. For the sweet potato purée, I used a couple of medium sweet potatoes, peeled and diced. Boil them until they're fork-tender, then drain really well. I like to add a splash of warm milk (or cream if you're feeling extra indulgent!), a knob of butter, a pinch of salt, and sometimes a tiny dash of nutmeg or cinnamon for a little warmth. Blend it with an immersion blender or mash it really well until it's super smooth and creamy. The vibrant orange color against the white scallops is just stunning! And the caviar? Oh, the caviar! It instantly elevates the whole dish. You don't need a huge amount; just a small spoonful on top of each scallop adds that incredible briny pop and a touch of luxury.
