Homemade Raspberry Honey Lollipops you won’t mind your kids to have as many as they want 🍋🍯🍭
These natural lollipops are perfect for a sweet treat or a soothing remedy for sore throats!
Ingredients:
- 1/4 cup fresh lemon juice 🍋 (about 2 lemons)
- 1/4 cup fresh raspberries (youll need about 2 tablespoons of raspberry juice)
- 1 cup honey 🍯
- 1/4 cup water 💧
- Lollipop sticks 🍭
- Silicone lollipop mold or parchment paper
Instructions:
1. Cook the syrup in a saucepan, combining honey, water, lemon juice and raspberries.
2. Heat the mixture over medium heat, stirring until combined.
- Attach a candy thermometer and bring the mixture to a boil.
- Continue cooking without stirring until the thermometer reads 300°F (hard crack stage).
3. Strain through a fine mesh sieve to remove seeds.
4. Quickly pour the hot syrup into lollipop molds or spoon small rounds onto parchment paper.
- Insert lollipop sticks into each mold and twist gently to coat.
5. Allow the lollipops to cool completely (about 30 minutes) until hardened.
6. Pop the lollipops out of the molds and enjoy!
