Chicken Bacon Skewers

super easy meal prep idea!

preheat your oven to 400-425.

I start off by cutting up about a pound and a half of chicken breast into cubes throwing them into a bowl with a little bit of oil, honey, salt, pepper, and for this particular set, l used the seasonings shown in the video. I always let it sit out for a minute, let it all kinda come together while the skewers rest in water. I skewer 7 to 8 pieces of chicken and wrap that bad boy in some bacon and lay it on my sheet.

I let it cook for 15-20 ish minutes. (it really depends on how thick you make your cubes)

While chicken skewers are cooking. I make a sauce that consists of a splash of oil, honey, about 3 tablespoons of butter and a mix of the seasonings that I used for that chicken for this night. (I only used the kinder's in the honey butter mixture for this night)

I slather the butter mixture on the top side of the chicken skewers, rotate them over and pop it back in the oven for another 5 to 10 minutes, I pulled the pan back out, lather the butter on that side of the chicken and pop it back in the oven for just another 5 to 10 minutes to finish browning out.

I know that timing seems weird, but it really all depends on how big of cubes you do, the temperature of your oven, how thick your bacon is and other factors. Always check your temps! #chickenrecipeideas #chickenmeals #mealprepideas

... Read moreSo many of you enjoyed my simple recipe for chicken bacon skewers, and honestly, they've become a staple in my rotation! But guess what? There are so many ways to switch them up and keep things exciting. I've been experimenting with a few twists, and I can't wait to share my favorites to make these skewers even more versatile for your meal prep. Beyond the Oven: Other Cooking Methods While baking is super convenient, sometimes I crave that smoky flavor. If you've got a grill, these skewers are a dream! Preheat your grill to medium-high heat (around 400°F or 200°C). Brush the grates with a little oil to prevent sticking. Grill the skewers for about 15-20 minutes, turning every 4-5 minutes, until the bacon is crispy and the chicken is cooked through (internal temp 165°F/74°C). The sizzle and char marks are just divine! For an even quicker option, try the air fryer. I usually set mine to 375°F (190°C) and cook for 15-20 minutes, flipping halfway. Keep an eye on them, as air fryers can vary, but you’ll get deliciously crispy bacon and juicy chicken every time. It’s my go-to when I'm short on time. Flavor Twists and Add-Ins The honey-butter glaze is classic, but why stop there? For a bit of a kick, I sometimes add a pinch of cayenne pepper or a dash of hot sauce to the original sauce. Another favorite is a BBQ glaze – just mix your favorite BBQ sauce with a little honey and brush it on in the last few minutes of cooking. If you're feeling adventurous, try stuffing your chicken! A small cube of mozzarella or cream cheese inside each chicken piece before wrapping with bacon is a total game-changer. For a complete meal on a stick, add some colorful veggies like bell peppers (red, yellow, orange!), red onion chunks, or even pineapple pieces between the chicken and bacon. They add a lovely sweetness and texture, plus it’s an easy way to get your greens (or reds and yellows!). Serving Suggestions & Smart Meal Prep These skewers are fantastic on their own, but pairing them with the right sides makes it a full meal. My go-to quick sides are fluffy rice, quinoa, or a simple green salad with a light vinaigrette. If I have more time, roasted asparagus or sweet potato fries are perfect companions. For meal prep, these skewers are gold! Once they've cooled completely, store them in an airtight container in the fridge for up to 3-4 days. They reheat beautifully in the microwave, oven, or even the air fryer. If you want to prep even further ahead, you can assemble the skewers (without the sauce) and freeze them uncooked on a baking sheet, then transfer to a freezer bag. When ready to cook, thaw overnight in the fridge and proceed with the recipe. Trust me, having these ready to go on a busy weeknight is a lifesaver!
