Baked Homemade Italian Meatballs
1 pound ground beef
1 pound ground sausage
1/3 cup Italian breadcrumbs
2 egg yolks
1/4 cup milk
1 shallot
2 large garlic cloves
salt
pepper
italian seasoning
garlic powder
Preheat your oven to 425
I mixed things in one by one for the most part to ensure everything was as evenly distributed as possible. The mixing of the breadcrumbs and milk before everything else was a game changer from previous times I have tried making meatballs.
I made small and larger sized meatballs.
I baked for about 10ish minutes, flipped them over and back in for about another 10 (i go off of feeling and temp)…they held together well and were the perfect texture for a meatball sandwich. Definitely will be making again!

From my experience, the key to juicy and flavorful meatballs lies in temperature and timing. Baking at around 400 to 425°F ensures they cook evenly and retain their moisture without drying out. I usually bake small meatballs for 18-20 minutes, flipping them halfway to get even browning on all sides. For larger meatballs, you might want to add a few extra minutes. If you prefer baking at 375°F, plan for a slightly longer cooking time, typically 25-30 minutes, but always check for doneness by checking the internal temperature; it should reach about 160°F for safety. Using a meat thermometer really helps avoid over or undercooking. Something that helped me was soaking the Italian breadcrumbs in milk before mixing with the meat. This small step prevents dryness and enhances tenderness. Also, adding extra seasoning like garlic powder and Italian herbs boosts the flavor without extra effort. To make cleanup easy, I recommend using a parchment-lined baking sheet. The meatballs brown nicely and don’t stick. Finally, let them rest a few minutes before serving, which helps the juices redistribute inside for a more tender bite. If you're into meatball sandwiches or pasta, these oven-baked meatballs are incredibly versatile and quick to make. Let me know if you want a sauce recipe to go with them!
