Chinese Inspired Pork and Rice

I start by seasoning my pork with salt, pepper and garlic powder….throw that into a pan with a couple of tablespoons of oil on medium high. While the pork is cooking in a separate bowl mix the rest of the ingredients below (you really could use less or more, depending on what you have and want to use ginger, I just didn’t use it this time.) Once the pork is almost completely cooked, pour in the mixture and let the pork continue to cook and the sauce thicken, once your pork comes to temp turn down the stove to low until your sauce thickens to your liking. You can always add more cornstarch or water to get your desired texture.

Ingredients:

One package of pre cubed Pork Stew Meat

Salt

Pepper

Soy Sauce

Fish Sauce (a couple of splashes)

Rice Vinegar 2 tbspn or so

Sesame Oil 1 tbspn

Honey 2 tbspn

Brown Sugar 1tbspn or so

Garlic 2-3 cloves

Garlic Powder

Corn Starch

Water

I don’t use any real measurements, it’s with my heart ❤️ my best advice is to start with a smaller amount, because you can always add more to get the flavor you want.

I always pair this pork recipe with Basmati Rice and Zucchini which I sauté in butter and then season with cajun seasoning.

It's become one of my absolute go-to "ulam ideas" whenever I'm craving something satisfying without spending hours in the kitchen. I love how it brings together savory flavors with tender cubed pork and fluffy Basmati rice – it’s truly a perfect combination. What makes this dish such a winner for my personal "ulam ideas list" is its incredible versatility and how easily it fits into a busy lifestyle, especially if you're into meal prepping. I've found that having a few tricks up my sleeve can make all the difference. For instance, the sauce for this pork and rice can be whisked together in advance and stored in the fridge. That way, when dinner time rolls around, half the work is already done! I just need to get my cubed pork seasoned and into the pan, and then pour in my pre-made sauce. When I'm planning my meals for the week, I often double or even triple this recipe. Cooking a larger batch of the pork and sauce mixture means I have flavorful protein ready for several days. I then cook a big pot of Basmati rice separately. This way, I can mix and match throughout the week. One night it’s this amazing pork and rice, another night I might use the leftover pork mixture in lettuce wraps or even toss it with some noodles for a completely different meal. It’s all about maximizing your efforts! And let’s talk about the veggies! While I adore sautéed chopped green zucchini with a touch of Cajun seasoning (it adds such a nice counterpoint!), this dish is incredibly forgiving. If I don't have zucchini on hand, or I'm just in the mood for something different, I'll swap it out. Broccoli florets, snap peas, thinly sliced bell peppers, or even a handful of spinach wilted into the sauce at the end all work wonderfully. It’s all about using what you have and what you love. Sometimes I’ll even add some water chestnuts for an extra crunch. For those looking for even more "ulam ideas" or variations, consider playing with the protein. While pork stew meat is fantastic here, I've also made this with chicken thighs cut into cubes, or even firm tofu for a vegetarian option. Just adjust cooking times accordingly. Adding a touch of fresh ginger to the sauce, or a pinch of red pepper flakes for a bit of heat, can also transform the profile. Remember, cooking is all about tasting as you go and adjusting "with your heart" until it’s just right for your palate. That’s my secret ingredient! This recipe truly embodies what I look for in an "ulam": it’s hearty, full of flavor, and comes together relatively quickly. It’s the kind of dish that makes you feel accomplished without wearing you out. So next time you're staring at your pantry wondering what to make, give this Chinese-inspired pork and rice a try. It might just become your new favorite go-to, securing a permanent spot on your personal list of easy dinner ideas!
