Creamy Lemon Chicken Pasta
Two Pan Meal and oh so worth it…
I start by cubing up my chicken breasts, throw them in a bowl with some oil to coat and start seasoning. For this recipe I used what was shown in the video: salt, pepper, garlic powder, lemon and herb seasoning, the zest of one lemon and very last after coating everything, the juice of one lemon. Mix one more time and set to the side.
Just a couple of tablespoons of oil will do, sometimes I throw a little butter in, I did not this time. Get that chicken to cooking, I set it in the pan and leave it. Once I can really smell everything, I flip everything over to sit again and when the chicken is pretty much finished I toss around the pan just to ensure all sides get a good browning. I did chicken to temp and set to the side and covered to stay warm while I worked the sauce.
My Sauce ☺️….wicked uber easy. After you pull the chicken out, throw the garlic in and let it cook down until fragrant and then throw your chicken stock or broth in, whichever you prefer. I let this get to a boil, throw in some italian seasoning and heavy whipping cream (i live and breath by heavy whipping cream and butter), do a whisky dance and let it come together. After a minute or two of the liquids cooking together, I shredded in some Grana Padano cheese (that just so happen to be what I grabbed out of the fridge, use what you like), the zest and juice of one more lemon and just let it cook. I did add some more cream and cheese as it cooked down until I got the consistency that I personally like. Also, I did add the parm rind in, that is also totally optional.
For the pasta; I did just use a tortellini. That is my favorite, but really you could use any pasta you wanted.
Once everything is ready to go, I threw it in a bowl and called it a night. You could always throw the chicken back in, that part is totally up to you! Hope you enjoy this one!
