This isn't just about weight loss; it's about feeling amazing from the inside out, boosting my energy, and discovering new, delicious ways to enjoy nature's bounty. If you're looking to reset your eating habits, join me on this journey! Why 31 days, you ask? A month is the perfect amount of time to truly form new habits and see noticeable changes. My goal is to make fruits and vegetables the stars of every meal and snack. I’m especially looking forward to embracing all the fantastic summer vegetables available right now. Think crisp cucumbers, juicy tomatoes, and vibrant bell peppers – perfect for light, refreshing meals. To kick things off, I did a massive grocery haul, and let me tell you, my counter was overflowing! I made sure to stock up on a rainbow of fresh fruits like bananas, pineapple, sweet strawberries, tart raspberries, and both red and green grapes for snacking. For my vegetables, I grabbed plenty of avocados, ripe tomatoes, ginger for an extra kick, yellow squash, colorful red and green bell peppers, and a white onion. I also picked up some convenient bagged salads for quick lunches and a few bottled juices (100% natural, of course!) for when I need a quick pick-me-up. Having a well-stocked kitchen with these fruits in home makes it so much easier to stick to a clean eating plan. My strategy for these 31 days of veggies and fruits involves a lot of meal prepping. I'm chopping up summer vegetables ahead of time for stir-fries, salads, and roasting. For instance, I'll roast a big batch of yellow squash and bell peppers to add to eggs or quinoa bowls throughout the week. For fruits, I'm keeping a bowl of easy-to-grab options like oranges and bananas on the counter, and pre-portioning berries for smoothies or yogurt toppings. I'm also experimenting with new recipes to keep things interesting. One day it might be a big salad loaded with avocado and tomatoes, the next a delicious veggie curry featuring ginger and lots of summer vegetables. It's not always easy to stick to a plan, but I'm learning to listen to my body and celebrate small victories.
