GREAT NORTHERN & PINTO BEANS WITH SMOKED NECKBONES & SMOKED SAUSAGE RECIPE

1/2 lb northern beans, sorted & not presoaked,

1/2 lb pinto beans, sorted not presoaked

1 cup onion, diced

1/2 cup green bell pepper, diced

1/2 cup red bell pepper, diced

1 stalk celery, diced

2-3 lbs smoked pork neckbones

1 link smoked sausage

1 tsp garlic powder

1 tsp onion powder

1 tsp fresh thyme

1 tsp fresh rosemary, chopped

1 tsp salt

1 tsp pepper

6 cups chicken broth

3 tbsp olive oil

Put instapot on high saute mode, add olive oil and bell peppers, onions & celery. Stir in herbs and seasoning. Sauté approximately 5-6 minutes until veggies are softened. Turn off pot and add broth and (non presoaked) sorted beans and beckbones.

Brown sliced smoked sausages on each side. Put aside.

Pressure cook on high 40 minutes and natural release 20 minutes. Release remaining pressure.

Remove bones from pot. Using a food processor blend 1.5 cup of the beans and add back to pot.

Add in smoked sausages.

(Alternatively you could slow cook on low for 8-10 hours or on high 5 to 6 hours)

Johnny Cakes/ Heaux Cakes

1 cup flour

1 cup yellow cornmeal

4 tsp baking powder

3/4 tsp salt

2 tbsp sugar

2 large eggs

3/4 cup buttermilk

1/2 cup water

1/4 cup vegetable oil for frying

Heat a cast iron skillet over medium heat and use a 1/4 cup to scoop out batter and fry until golden brown on each side.
