this is such a simple and quickly prepped meal with SO MUCH FLAVOR ! great weeknight dinner idea that you can serve with almost anything! tacos , salad, veggies, potatos, rice , you name it!

ingredients

3 lbs beef chuck roast

3 bay leaves

1 yellow onion sliced

3 cloves of garlic smashed

salt & pepper

2 tbsp avocado oil

cooking stock ingredients

2 cups beef bone broth

4 Chipotle peppers in adobo

2 tbsp adobo sauce

3 garlic cloves

2 tbsp apple cider vinegar

1 lime juiced

2 tbsp cumin

2 tbsp Marjoram

1 tbsp onion powder

step 1. preheat oven to 325° . combine all stock ingredients in a blender ...or something with a secure lid ... not at small food processor like my dumb ass did .

step 2. cut roast into a few large chunks and season all sides with salt and pepper . in your Dutch oven, heat oil over high heat . sear all sides of the beef until nicely browned ! then add in onion , garlic, bayleaves, and stock we created. place in the oven for 3 - 3 1/2 hours .

step 3. remove from oven and shred . serve with anything you like!
