• 150g active sourdough starter
• 250g warm water
• 50g maple syrup
• 300g bread flour
• 200g whole wheat flour
• 10g ground cinnamon
• 10g salt
• 100g raisins

Instructions
1. Mix the Dough (Evening)
- In a large bowl, stir together the active sourdough starter, warm water, and maple syrup until lightly bubbly.
- Add bread flour, whole wheat flour, cinnamon, salt, and raisins. Mix until a shaggy dough forms, then knead for about 2 minutes until fully incorporated.
2. Bulk Ferment
- Cover the bowl and let the dough rest at room temperature overnight (12–18 hours), until visibly risen and puffy.
3. Shape the Bagels (Next Morning)
- Turn the dough out and divide into 6 equal pieces. Shape each into a smooth ball and place on a parchment-lined baking sheet.
- Cover with a towel and let rest for 30–60 minutes.
4. Form the Bagels
- Poke your finger through the center of each dough ball and gently spin or stretch it to create a hole, forming a bagel shape.
- Cover again and let rest for another 30–60 minutes.
5. Boil & Prepare to Bake
- Preheat your oven to 425°F (220°C).
Bring a large pot of water to a boil. Gently place each bagel into the boiling water (they should float). - Boil for 30 seconds per side, then transfer back to the baking sheet.
6. Bake
- Bake the bagels for 20–25 minutes, until golden brown.
