The Journey of Edgar Allen Dough!

Edgar is my 13 day old sourdough starter made from scratch ☺️ He is 50% whole wheat flour and 50% unbleached AP flour. He has always been very bubbly and as of yesterday he is starting the next phase in his fermentation process. He doubled nicely in 6 hours and I am super excited to start baking with him soon!! #homemade #sourdough #sourdoughbeginner #bread

To ensure the best results, it’s important to maintain a regular feeding schedule, typically every 12 hours for active starters. This involves discarding a portion of the starter and adding fresh flour and water in equal ratios. For beginners, monitoring the bubbles and growth of the starter can indicate its health. A bubbly, active starter like Edgar shows that your fermentation process is on track. Moreover, understanding the various flours used in your starter can influence the flavor profile of your bread. Whole wheat flour provides higher nutrients and a richer flavor due to the bran and germ, while unbleached all-purpose flour helps create a lighter texture. As you progress, consider experimenting with different types of flour or adding ingredients like honey or yogurt to enhance the tangy flavor of your sourdough. Keeping a log of your feeding schedule, growth measurements, and baking results can also help you refine your technique. Happy baking!
