Egg-Free Burnt Cheesecake Recipe You’ll Love!

Lately, eggs have been weirdly hard to find where I live — anyone else?? 😅 But my cravings for that rich, creamy Basque burnt cheesecake wouldn’t go away. So… I came up with an eggless version that tastes just as good (maybe even better 😏).

And yes — it's cheat day approved 💚

Today I'm sharing my Matcha Eggless Burnt Cheesecake recipe for a 5-inch pan. Super simple, no fancy tools, and soooo satisfying.

🧁 Ingredients:

Anchor Cheese cream – 250g

Milk – 120g

Sugar – 80g

Matcha powder – 15g

Hot water – 30g

Whipping cream – 150g

Corn starch – 20g

Optional flavor swaps:

☕️ Cocoa, coffee, chocolate, strawberry, lemon… or skip the matcha + hot water for a classic flavor.

🔥 Baking Instructions:

1. Bake at 220°C / 190°C

2. For 20-22 minutes (adjust based on your oven)

3. Want that gooey lava center? Stop at 20 mins!

4. Mix all ingredients, sift for a smoother texture

5. Let cool, then chill in the fridge for 4+ hours or overnight

✨ Pro tip: I like to pop a Freshmile toothpaste tab (mint or Coconut flavor 🌿) after dessert — keeps my breath fresh without ruining the taste vibe of a creamy treat!

his one’s been my go-to dessert lately — especially when I want something indulgent but egg-free.

... Read moreYou know that irresistible urge for a creamy, dreamy Basque Burnt Cheesecake? I completely get it! Especially when you want something indulgent but maybe you're out of eggs, or looking for an allergy-friendly option. My journey to perfecting this eggless version was driven by pure craving, and I'm so excited to share more tips to make yours absolutely perfect. First off, why go eggless? Beyond just actual egg availability issues, some people prefer an egg-free version for dietary reasons, allergies, or simply because they find the texture even more custard-like and less 'eggy.' It's a fantastic alternative that truly doesn't compromise on that signature rich flavor we all adore. Now, let's talk about achieving that iconic 'burnt' top and the glorious gooey center. The magic truly happens with high heat! Don't be afraid of the oven temperature – that's what gives it that beautifully caramelized, almost bittersweet crust that contrasts so perfectly with the sweet interior. For that dreamy, lava-like gooey center, closely watch your baking time. As the recipe suggests, stopping around 20 minutes is key. You want the edges to be set, but the very center should still have a noticeable wobble when you gently shake the pan. It might look undercooked, but trust the process! The cheesecake continues to set as it cools, and chilling it for at least 4 hours (or even better, overnight!) is non-negotiable for that perfect slice. The cooling transforms that wobble into a luscious, creamy texture. Beyond matcha, which adds a wonderful earthy note, the world of flavor swaps is your oyster! For a chocolatey twist, simply melt some good quality cocoa or dark chocolate into your cream cheese mixture. A zesty lemon version can be achieved by adding fresh lemon juice and zest. Think about adding a swirl of berry compote to the batter before baking for a fruity burst. And when it comes to serving, don't underestimate the power of toppings! While delicious on its own, a simple dusting of powdered sugar, a dollop of fresh whipping cream, or a drizzle of caramel sauce can elevate your burnt cheesecake experience even further. Fresh berries, like raspberries or blueberries, also provide a lovely tart contrast to the richness. Ingredients matter, too. Using a good quality cream cheese, like Anchor Cheese cream as suggested, makes a difference in the overall richness and texture. And don't forget to sift your dry ingredients, especially corn starch and matcha powder, to avoid any lumps and ensure a silky smooth batter. My best advice? Don't overmix the batter once the wet and dry ingredients are combined; mix just until smooth. Overmixing can incorporate too much air, leading to a less dense texture. And remember, every oven is a little different, so don't be afraid to adjust baking times slightly based on how your oven performs. Once you master this eggless wonder, it'll become your go-to for cheat days or any day you need a little sweet indulgence!
