Vegan Broccoli and Alfredo Pasta

Ingredients: ONE POT Broccoli Alfredo
- 1 package of protein pasta
- At least 2 cups of Broccoli
- Salt and pepper - pinch
- Garlic ( 4 cloves minced)
- 4 C veggie broth
Bring to a boil and cook until noodles are soft and broth is absorbed.
Add my Alfredo, from the Saucy Vegan Mama cookbook (link in profile):
- 1 med white onion
- 1 C veggie broth
- 1/2 TBSP lemon juice
- 3 TBSP nutritional yeast
- 1 TBSP white miso
- 1/2 C cashews
- 2/3 C white beans
- 2-4 garlic cloves (to your liking)
- Mix until smooth in a high speed blender.
