Sourdough discard Pretzel Bites are 🔥

I am in my homesteading era which has to include the amazing world of sourdough! When I saw sourdough discard pretzel bites were a hit I mean gone in 30 minutes in my household! Plus super easy to make!

👩‍🍳Home Recipe :

3 ¾ cup all-purpose flour

2 TBS sugar

1 tsp salt

2 ¼ tsp active yeast

1 cup sourdough discard

1 cup warm water

1 egg for egg wash

cinnamon sugar topping (optional)

everything bagel seasoning topping (optional)

Detailed Steps: In a stand mixer add flour, yeast, sugar, and salt. Mix to combine. Add sourdough discard to warm water and stir, on low speed. Add water + discard to the flour mixture. Increase to medium speed and knead dough for 4-5 minutes. This is a fairly sturdy dough so add more water if needed, 1 tablespoon at a time. Transfer dough to greased bowl, cover with plastic wrap and let sit on counter to rise for 90 minutes – 2 hours. Or until doubled in size. Roll out and cut in to .5-1 inch strips, then in to bite sizes pieces. Preheat oven to 425 degrees and line baking sheet with parchment paper. Boil large pot of water and when boiling add 1 TBS of baking soda + 1 TBS of sugar to boiling water. Place bites in and let boil on each side for 30 to 60 seconds. Top bites with egg wash and toppings of your choice. (I did everything bagel seasoning and cinnamon sugar). Bake at 425 degrees for 12-15 minutes until golden brown. Let cool before cutting, and enjoy!

Additional tips/notes: (This recipe also works for 8 large bagels as well)!
