Ingredients
• ½ lb ground turkey
• 1 tbsp avocado oil
• ½ small onion, diced
• 2 cloves garlic, minced
• 1 tsp Italian seasoning
• ½ tsp paprika
• ½ tsp salt
• ¼ tsp black pepper
• Pinch of red pepper flakes (optional)
• 1 tbsp tomato paste
• 1 can (14 oz) crushed tomatoes
• 1½ cups chicken or beef broth
• ¾ cup water
• 4–5 lasagna noodles, broken into pieces
• ½ cup ricotta cheese
• ½ cup shredded mozzarella
• ¼ cup grated Parmesan
• Fresh basil or parsley (optional)

Steps
1. Brown the Meat
In a pot, heat olive oil over medium heat.
Add onion and cook until soft (2–3 minutes).
Add garlic, cook 30 seconds.
Add ground meat and brown completely.
2. Season & Build Flavor
Stir in Italian seasoning, paprika, salt, pepper, and red pepper flakes.
Add tomato paste and cook 1 minute.
3. Add Liquids
Pour in crushed tomatoes, broth, and water.
Bring to a gentle boil.
4. Add Pasta
Drop in broken lasagna noodles.
Simmer uncovered for 12–15 minutes, stirring occasionally, until noodles are tender.
5. Cheese Magic
In a small bowl, mix ricotta, mozzarella, and Parmesan.
6. Serve
Ladle soup into bowls.
Top with a big spoon of the cheese mixture and let it melt in.
Garnish with basil or parsley
