Turkey Parmesan Zucchini Boats (Low Carb)

👩🏻 Home Recipe 🍽️

Occasion & Servings: 4

Ingredient 1 & Portion: Ground Turkey 1lb

Ingredient 2 & Portion: Ground Turkey Sausage 1/2lb

Ingredient 3 & Portion: 2 Large Zucchini

Ingredient 4 & Portion: Organic Pasta Sauce

Ingredient 5 & Portion: Parmesan Cheese

Ingredient 6 & Portion: Mozzarella Cheese

Detailed Steps:

1. Pre-heat oven to 375 degrees(f).

2. While the oven is pre-heating brown ground turkey and turkey sausage in pan, then add pasta sauce. NOTE: I like to spice my pasta sauce up with red and green bell peppers, onion and seasonings (garlic and onion powder, italian seasoning, fresh basil and oregano).

3. Cook pasta sauce for 10 minutes then remove from heat.

4. Cut zucchini in half and core out the middle leaving a boat. Put cored zucchini halves in baking dish, sprinkle with salt, pepper and parmesan cheese.

5. Place a cup of the pasta sauce mixture inside cored zucchini.

6. Sprinkle with parmesan cheese and place 4 thinly sliced pieces of mozzarella cheese over top.

7. Place baking dish in pre-heated oven and cook for 20 minutes. The zucchini should be soft and mozzarella cheese slightly browned.

8. Remove baking dish from oven, let cool for 5 minutes.

9. Garnish with parsley and parmesan cheese.

Enjoy!

... Read moreI absolutely adore these Turkey Parmesan Zucchini Boats not just for their incredible flavor, but because they genuinely make healthy eating feel effortless and delicious! When I'm planning my week, a recipe like this is a lifesaver, especially when trying to stick to my low-carb goals. What makes this such a fantastic healthy dinner idea? First, let's talk about zucchini. It's incredibly versatile and low in calories, but packed with nutrients like Vitamin C and potassium. By coring out the middle and using it as a 'boat,' you're naturally cutting down on carbs compared to pasta or rice, without sacrificing any of the satisfaction. Plus, it adds a lovely freshness and slight crunch to the dish. Then there's the lean ground turkey and turkey sausage. Swapping out heavier meats for turkey is a smart move for reducing saturated fats while still getting a generous portion of protein. Protein is key for keeping you full and satisfied, which is so important for healthy dinner choices that won't leave you raiding the pantry an hour later! I often look for organic pasta sauce too, to avoid added sugars and artificial ingredients, keeping the whole meal cleaner. For those busy weeknights, these zucchini boats are a dream for meal prepping. You can brown the ground turkey and turkey sausage mixture with the pasta sauce ahead of time and store it in an airtight container for up to 3 days. When you're ready to cook, just core your zucchini, fill them up, top with that yummy Parmesan cheese and mozzarella cheese, and bake! This simple trick transforms a 45-minute recipe into a speedy 25-minute assembly and bake, perfect after a long day. Want to customize your healthy dinner? Feel free to add more veggies to your turkey mixture – finely diced mushrooms, spinach, or even some bell peppers (as mentioned in the original recipe, which I totally recommend!) can boost the nutrient content. If you're not strictly low-carb, a sprinkle of breadcrumbs on top before baking can add a nice texture. For a vegetarian twist, consider swapping the turkey for seasoned lentils or a mix of mushrooms and quinoa. And instead of just Parmesan and mozzarella, a little sprinkle of feta or goat cheese can add a whole new flavor dimension! To make it a complete healthy dinner, I love serving these zucchini boats with a simple side salad dressed with a light vinaigrette, or some steamed green beans with a squeeze of lemon. It rounds out the meal beautifully without adding unnecessary calories. It's amazing how satisfying and indulgent a healthy dinner can feel when it's packed with such fresh, wholesome ingredients!
