Tips on how to get the softest tortillas:

• use boiling water!! It helps bring everything together

• kneading until the dough is soft and no longer sticking to counter, & letting it rest 15 mins after kneading & after dividing to prevent shrinkage!

• roll the tortillas as thin as possible!! We don’t want naan bread!

• cook on a HOT comal, if it’s not cooking in 30 sec per side or less then it’ll just get hard and tough like naan bread.

• immediately wrap in towel or put in tortillero, the steam helps keep them soft.

There's nothing quite like a warm, soft, pliable flour tortilla fresh off the griddle. I've been on a quest for the perfect recipe, and after many trials (and some tough, sad tortillas), I’ve finally landed on a method that consistently delivers the softest results. It’s all about understanding a few fundamental principles that transform simple ingredients like all-purpose flour, water, and fat into culinary magic. One of the biggest game-changers for me was realizing the power of boiling water. Seriously, don't just use warm water – make it boiling hot! This really helps to 'pre-cook' some of the starches in the flour, creating a more elastic and manageable dough right from the start. When you're mixing, slowly add that hot water, perhaps with a spoon at first, as it will be quite hot. Then, once it's cool enough to touch, you can get your hands in there. Don't forget your fat – I often use unsalted butter, as shown in my recipe, which adds richness and also contributes to that wonderful softness. Next up is the kneading process, which is absolutely crucial. You might feel like you're kneading forever, but those 5-7 minutes of working the dough until it’s smooth and no longer sticky are essential for developing the gluten. This is what gives your tortillas their structure and elasticity. But here's the real secret: resting the dough. I can't stress this enough! After the initial knead, letting the dough rest for at least 15 minutes allows the gluten to relax. This relaxation prevents shrinkage when you roll them out. And guess what? There’s a second rest! Once you've divided your dough into equal-sized balls, let them rest again for another 15 minutes. This double rest is key to getting those perfectly round, thin tortillas without them fighting you back. When it comes to rolling, think thin, thin, thin! You want them as transparent as possible without tearing. If they’re too thick, you’ll end up with something closer to naan bread – delicious, but not what we’re going for here! And for cooking, your comal (or cast iron skillet) needs to be screaming hot. Seriously, get it smoking! A hot surface cooks the tortilla quickly, allowing it to puff up beautifully and cook through in about 30 seconds per side. If your comal isn't hot enough, the tortilla will just sit there, drying out and becoming tough instead of soft and pliable. Look for those bubbles forming – that’s your cue to flip! The very last step, and one that's often overlooked, is immediately transferring your cooked tortillas to a tortillero or wrapping them in a clean kitchen towel. The steam trapped inside is what keeps them incredibly soft and pliable. If you let them cool exposed to the air, they’ll dry out and get stiff. This simple trick makes all the difference! With these tips, you'll be enjoying warm, incredibly soft homemade flour tortillas that are perfect for tacos, quesadillas, or just eating plain with a little butter. Happy cooking!
