If you're a fan of comforting and easy-to-make meals, this chili recipe is a real winner. I love how straightforward it is — browning the hamburger first brings out great flavor, and using pantry staples like a large can of petite diced tomatoes and a McCormick mild chili seasoning mix keeps things convenient without sacrificing taste. Adding a jar of mild salsa gives it a fresh and slightly tangy kick, while the dark red kidney beans add a hearty texture and extra protein. One tip I often use when making crockpot chili is to rinse the beans well to reduce excess sodium and any canned taste. Also, setting the crockpot on high for the first hour helps to rapidly build flavors, then lowering it allows the chili to simmer and deepen its taste gently. I find topping the chili with shredded Mexican cheese blends — like cheddar, asadero, quesadilla, and Monterey Jack — is a must for that melty, creamy finish. If you have extra time, making your own spice blend inspired by McCormick's herbs and spices can be fun and lets you adjust the heat level just right. This chili works wonderfully as a make-ahead meal for busy weeknights or for meal prepping in larger batches. It freezes well, so you can portion and save some for easy reheating later. Plus, it pairs perfectly with a side of crusty bread or over a baked potato for a filling and satisfying dinner. Overall, this recipe is a crowd-pleaser that balances convenience with home-cooked goodness, making it one of my favorite go-to chili recipes for any season.
