How should I fight this?

I bought a drink at Nekter Juice Bar total $17.28. I paid with Apple Pay without checking, got home to a $1,111.77 charge. Turns out, the staff added a ""tip"" of $1,094.49, 6433.85% of the bill. So I called Chase to report fraud. They canceled the charge. Then I confronted the store. The staff didn’t care, said they keep no records and their manager needs to escalate to HQ. Months later, no call and no apology. Worse, Chase just recharged the $1,111.77. Now I’m fighting the bank again, but what if they refuse? The store’s ghosting. This isn’t a typo, it’s straight-up theft. Has anyone dealt with rogue tip scams like this? How do you get money back when they ghost and banks reverse course?
