▪️4-6 servings

▪️1 package romaine lettuce

▪️4 slices of deli Swiss cheese cut into 1 inch x 1/4 inch strips

▪️1/3 cup craisins

▪️1/3 cup cashews

▪️2 empire apples cut into bite size pieces

For the dressing:

▪️1/3 cup fresh lemon juice (I like to use a little less)

▪️1/2 cup or less sugar

▪️2/3 cup olive oil

▪️1 Tablespoon finely chopped onion

▪️1 teaspoon Dijon mustard

▪️1/2 teaspoon salt

Steps:

1. Cut romaine into chunks.

2. Cut apples into chunks.

3. Cut Swiss cheese into strips.

4. Combine romaine, apples, cheese, cashews, and craisins in a large bowl.

5. In a separate bowl, whisk together oil, lemon juice, sugar, Dijon mustard, onion and salt.

6. Pour dressing over salad and serve.
