Mom Called it Potato Pie

I have no clue where this dish came from, but my mom used to call it Potato Pie. I haven’t the slightest clue of its origin. But it’s the first thing I think of when I think of comfort food. Over the years, I’ve made it a thousand times, added my own twists, and now it’s basically my emotional support casserole: cheesy, hearty, and a little over the top. The only downside? You have to let it sit for 30 minutes after it comes out, which feels like cruel and unusual punishment when all you want is molten potato-cheese goodness. My mom sometimes fancied it up with an egg, but I don’t bother—and it still sets perfectly fine. Essentially, if mashed potatoes went on a Vegas bender and came back “married with toppings,” this would be the result.
