Tiramisu has always been one of my favorite desserts ever. I still remember getting the tiramisu cake from Vineros Bakery in the East Village when I was a kid — it was life-changing.
This is my version of a tiramisu cupcake, and it’s surprisingly easy. Start with vanilla cupcakes — box mix or from scratch, either works perfectly. The magic is in the assembly.
The coffee syrup is just equal parts sugar and coffee. If you can let it sit in the fridge for a day or two, even better, but if not, go ahead and brush it on right away — you’ll still get soft, moist, not-too-sweet cupcakes.
The mascarpone frosting is always the showstopper. Everyone I’ve made these for loves them and swears they look way more complicated than they are. It’s really just a few simple steps.
My favorite part? The chocolate chips. When I’m feeling fancy, I’ll carve out the middle and fill it with extra chocolate chips for that little surprise bite — but they’re just as good without.
