Hungarian goulash
3 lbs. chuck or round of beef
3 pts. stock
2 cloves garlic
1 bay leaf
1 t. salt
Few grains cayenne pepper
6 medium sized potatoes
3 T butter
3 T flour
3 T paprika
1 c. tomato puree
Cut meat into 1 1/2 inch cubes. Fry out a little of the fat and brown meat in it. Add stock, garlic, bay leaf,
salt and cayenne. Simmer for 2 1/2 hours over low heat, then add potatoes and simmer for 35 to 40 minutes
longer. Cream butter, flour and paprika together. Combine with a little of the liquid from the goulash and add
tomato puree. Serve hot on a hot latter and garnish each end with cooked noodes. (wide egg noodles)
