Ingredients

• 2 lbs 93% lean ground beef

• 3 tbsp taco seasoning (adjust to taste)

• ½ cup onion (red or white), diced

• 1 can of chili beans in sauce

• 1 cup corn (frozen or canned, drained)

• ~2 lbs mini yellow potatoes (about 20–25 small potatoes = 4–6 per bowl)

• 1 cup baby tomatoes, halved

• ¼ cup cottage cheese (optional, mixed into beef for protein boost)

• ¼–½ cup green salsa (optional for topping)

• Optional: 2 oz cream cheese or queso (for creaminess)

🔪 Directions

1. Cook the potatoes

• Halve or quarter mini potatoes (bite-sized).

• Toss with a drizzle of olive oil, salt, pepper, and a pinch of chili powder or cumin.

• Roast at 400°F for 25–30 min until golden and tender.

2. Cook beef filling

• In a skillet, sauté onions until softened.

• Add ground beef, cook until browned.

• Stir in taco seasoning

• Mix in beans and corn.

• (Optional) Stir in cottage cheese or cream cheese for creaminess.( I used cottage cheese.)

3. Assemble bowls (5 containers I was able to make more than five containers. I made seven out of this meal, weighing everything on my scale.)

• Bottom layer: 3-4 roasted mini potatoes.

• Middle layer: 1 heaping cup beef/bean mixture.

• Top: Baby tomatoes, drizzle of green salsa, and 1–2 tbsp Greek yogurt.
