I usually start by trimming the fat off the pork chops and making sure they're boneless for easier cooking and eating. Coating them in a seasoned flour mixture not only adds taste but also helps create a nice browned crust when seared in hot oil. This step really locks in the pork's juiciness. Once the chops are browned, the mix of uncooked rice, stewed tomatoes (I prefer diced for added texture), chopped onion, and green pepper is poured over them. This mix simmers slowly for about 45 minutes, which allows the rice to absorb all the rich flavors from the pork, tomatoes, and spices without needing to stir or lift the lid—keeping the steam inside and cooking everything evenly. I’ve found that using stewed tomatoes really elevates the dish. It adds a slight tanginess and moisture that complements the savory pork and fluffy rice. If you like, you can also experiment with adding a splash of broth or some herbs like thyme or oregano for an extra layer of taste. Plus, this dish pairs wonderfully with a simple green salad or steamed vegetables to round out the meal. What makes this recipe especially great is how budget-friendly it is, using common pantry items like flour, rice, and canned tomatoes, but still bringing a comforting, homemade feel to the table. It’s a great way to feed a family without complicated steps or expensive ingredients, and leftovers reheat beautifully too. Give it a try next time you want a warm, satisfying dinner that’s easy on your wallet and everyone’s taste buds!
