I seriously can't get enough of these; they're such a lifesaver for those busy LUNCH TIME! moments. Getting that perfect crispy texture on your tofu squares is key, and it's actually super simple once you know the tricks. First things first, pressing your tofu is a game-changer. I usually just wrap a block of firm or extra-firm tofu in a few paper towels, place it between two plates, and stack something heavy on top (like a cookbook or a can) for about 20-30 minutes. This gets rid of all that excess water, which is what helps it crisp up beautifully in the pan. Once pressed, I cut my tofu into bite-sized squares – usually about 1-inch cubes – which gives them plenty of surface area to get wonderfully golden. After pressing and cutting, I like to toss the tofu squares with a tiny bit of cornstarch or arrowroot powder. This creates an extra barrier that makes them incredibly crunchy when pan-fried. Just a light dusting is enough! Then, heat up some oil (sesame or a neutral oil works great) in your pan over medium-high heat. Make sure not to overcrowd the pan; cook your tofu in batches if needed so each piece gets even browning. Flip them every few minutes until all sides are golden brown and perfectly crispy. This usually takes about 10-15 minutes. Now, for the star of the show: that irresistible spicy sauce! The original recipe is fantastic, using dark and regular soy sauce, Gochujang, Gochugaru, sesame oil, and a touch of water. I often tweak the heat level depending on my mood. If you love a good kick, don't be shy with the Gochugaru (Korean chili flakes). If you prefer it milder, just reduce it or skip it, and focus on the savory, slightly sweet notes from the Gochujang. Sometimes, I even add a tiny drizzle of maple syrup or honey for a touch more sweetness to balance the spice. These spicy crispy tofu squares are incredibly versatile. While they're amazing on their own, I love serving them over a bed of fluffy steamed rice, just like in the picture! It makes for such a satisfying and complete meal. To add more freshness and color, I often toss in some thinly sliced bell pepper (red or yellow works wonderfully!) and those refreshing sliced cucumbers. A sprinkle of sesame seeds not only looks pretty but adds a lovely nutty flavor. It's truly a meal that feels gourmet but takes minimal effort – exactly what I need for a healthy, delicious lunch.
