Try this Porridge for your Next Breakfast

I love porridge, coming from Jamaican household porridge was a staple for us growing up. If you know then you know. In America porridge might be eaten more so in fall and winter months but in Caribbean households it’s all year round. Porridge can be almost anything that sweet and creamy and warm so for this time I made Plantain Porridge. It’s pretty simple to make and doesn’t require much just a bit of patience and arm work for the first few minutes so it doesn’t stick to the bottom of the pot.

I like to mix mine with both green and yellow plantains for a sweet savory note but you can use all green plantains if you prefer. Coconut milk or cream for a a rich creamy depth of flavor and texture but can be opted out if you’re allergic. Now the finishing touch condensed milk to me it’s a must not the healthiest but it does wonders and a classic.

Ingredients:

1 green plantain

1 yellow plantain

32oz water

1 can of coconut milk

1/2 of a can of condensed milk

1tbsp cinnamon powder (better if you have cinnamon stick you can throw it in the pot when cooking)

1tsp nutmeg

2tsp vanilla extract

If using cream go with just 1/4cup and more water

Blend together until smooth, place in a sauce pan on a medium heat and whisk for the first 3 to 5 minutes. At that point you will see it start to thicken up, now lower the heat to low then cover the pot like cook for additional 15 minutes. At the end add the condensed milk and spices. Pour out into a bowl and enjoy!!
