🍴 Maple Walnut, Pecan & Chickpea Cornbread

Ingredients:

• 1 can Goode Foods Chickpeas (15 oz), drained & mashed

• 1 cup cornmeal

• 1 cup all-purpose flour

• 1/3 cup sugar (or honey)

• 1 tbsp baking powder

• 1/2 tsp salt

• 1 cup plant-based milk (or dairy)

• 1/3 cup vegetable oil or melted butter

• 1 tsp vanilla extract

• 1/2 cup chopped walnuts (plus extra for topping)

• Maple syrup for drizzle

Instructions:

1. Preheat oven to 375°F (190°C). Lightly grease an 8x8 pan.

2. In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.

3. In another bowl, mix milk, oil, and vanilla. Stir in mashed chickpeas until combined.

4. Add wet to dry ingredients and gently fold in chopped walnuts.

5. Pour batter into pan and bake 30–35 minutes, until golden and toothpick comes out clean.

6. Cool, drizzle with maple syrup, and top with walnuts or pecans.
