Cooking Elegant Women’s Recipes Episode 2 - Audrey Hepburn’s penne alla vodka. This pasta recipe is seriously addictive. It’s one of my favorite dinner recipes to make and it was so easy.

Side note: I doubled her sauce recipe to make it extra rich, but you can do whatever sounds right to you.

INGREDIENTS

- 1/3 onion

- Pinch crushed red pepper flakes (or more if you want)

- 5½ tablespoons unsalted butter

- 1 cup tomato puree

- ½ cup vodka

- ½ cup heavy cream

- Salt to taste

- 1 pound (500g) penne pasta

- 1 ounce (30g) parmesan, grated (or more if desired

METHOD

- In a large skillet, sauté the onion and pepper flakes in the butter over medium heat.

- Add tomato puree, reduce the heat to low, and cook for a few minutes (the original recipe didn’t say for how long).

- Then stir in the vodka and cook down for 15 minutes.

- Add the cream once sauce is reduced

- Cook pasta according to package directions & then add to the sauce.

- Turn the heat to high, and pan fry for one minute, tossing to thoroughly coat the pasta.

Sprinkle with the Parmesan and enjoy!

... Read morePenne alla vodka is a classic Italian-American dish that combines the creaminess of a tomato and vodka sauce with the comforting texture of penne pasta. One tip I’ve learned from my own cooking experience is that the key to a truly rich and flavorful sauce lies in the slow reduction of the tomato and vodka mixture. Allowing the sauce to simmer for about 15 minutes, as recommended, helps the alcohol cook off and intensifies the tomato’s natural sweetness. I love doubling the sauce ingredients just like suggested here because it lets me have extra coating for the pasta or save some for leftovers. Using unsalted butter gives more control over saltiness, so you can season according to taste – that’s important to keep the creaminess balanced and not overly rich. Adding a pinch of crushed red pepper flakes really rounds out the flavor by adding a gentle heat without overpowering the dish. For the pasta, choosing good-quality penne makes a difference; I usually pick a brand with a rough surface which helps the sauce cling better. Don’t forget to reserve some pasta water before draining – adding a splash back into the sauce can create a silkier texture when tossing the pasta. Finishing the dish by pan-frying the pasta with the sauce for a minute is a fantastic trick I picked up, which makes the flavors meld perfectly and adds a slight bite to the pasta edges. Lastly, fresh grated Parmesan cheese on top takes this dish to another level. Feel free to be generous with the cheese as it complements the creamy, slightly tangy vodka sauce beautifully. This recipe feels elegant yet approachable, perfect for weekday dinners or special occasions when you want to impress with minimal effort. It pairs wonderfully with a light green salad and a glass of crisp white wine for a complete meal experience. Enjoy cooking and indulging in this truly delightful Audrey Hepburn-inspired penne alla vodka!
