INGREDIENTS
- 1/3Â onion
- Pinch crushed red pepper flakes (or more if you want)
- 5½ tablespoons unsalted butter
- 1Â cup tomato puree
- ½ cup vodka
- ½ cup heavy cream
- Salt to taste
- 1Â pound (500g) penne pasta
- 1Â ounce (30g) parmesan, grated (or more if desired

METHOD
- In a large skillet, sauté the onion and pepper flakes in the butter over medium heat.
- Add tomato puree, reduce the heat to low, and cook for a few minutes (the original recipe didn’t say for how long).
- Then stir in the vodka and cook down for 15 minutes.
- Add the cream once sauce is reduced
- Cook pasta according to package directions & then add to the sauce.
- Turn the heat to high, and pan fry for one minute, tossing to thoroughly coat the pasta.
Sprinkle with the Parmesan and enjoy!
