🔶You’ll need (makes about 6 servings):
🔸For the marinated chicken:
1-1.5 lb skinless boneless chicken thighs, cut into 1” pieces
1g garlic powder
1g ground ginger
1g ground white pepper
A pinch of ground black pepper
4g salt
5g sugar
150g milk
🔸For the batter:
150g all-purpose flour
60g cornstarch
2g baking soda
3g salt
2g ground white pepper
1g garlic powder
A pinch of ground black pepper
1 egg
50g milk
🔸For the fried chicken bites:
Cooking oil
Bibigo Gochujang Hot & Sweet Sauce
Roasted white sesame seeds
🔶You’ll do:
1. To make the marinated chicken, mix all ingredients in a bowl, cover it, and refrigerate for 2-3 hours.
2. To prepare the batter, make the batter powder by combining all dry ingredients (all-purpose flour, cornstarch, baking soda, salt, ground white pepper, garlic powder, and ground black pepper) in a shallow dish. Transfer 90g of it to a different bowl. Set them aside.
3. Drain most of the liquid in the marinated chicken bowl, add the 90g of batter powder mix, an egg, and 50g of milk in the bowl, and mix well. Make sure all chicken pieces are thinly coated.
4. Transfer the chicken pieces to the batter powder mix dish, gently flip the chicken pieces a couple of times to coat them with the batter mix. Place them in a dish or baking sheet and set aside.
5. Add the cooking oil to a large Dutch oven and heat it over high heat. Once the oil temperature reaches 400°F, add 1/4 of the chicken and fry them for 2-3 minutes. Transfer the fried chicken to a cooling rack. Repeat until all chicken pieces are fried. *Make sure not to add too many chicken pieces in the Dutch oven at once so that they don’t stick together.
6. Drizzle the Bibigo Gochujang Hot & Sweet Sauce over the fried chicken bites and mix until all of them are coated with the sauce, sprinkle some roasted white sesame seeds on top.
