Spanish Tortilla

I wanted to show off my culinary skills by making this Spanish tortilla for my family :) I learned how to make it at a cooking class in Madrid but this was the first time I actually attempted it at home! I found a recipe online to follow but it’s actually quite basic.

Breakfast ideas: Spanish Tortilla

Ingredients: 2 medium onions 🧅 3-4 medium potatoes 🥔 olive oil 🫒 8 eggs 🥚 salt 🧂

Detailed Steps:

Slice onions in half and then into thin slices. Add some olive oil to a deep pan to fry the onions. While they are cooking cut the potatoes in the same way. Add the thin slices of potatoes to the onions and olive oil and cook for 15 minutes till they are caramelized. Crack 8 eggs into a bowl and add the hot potato and onion mix. Add salt to taste and then blend together roughly. Let sit for 30 minutes to absorb the flavors. Heat a nonstick pan with some olive oil and once hot add the mix. Wait 3 minutes and loosen edges with a rubber spatula. Take a slightly larger plate and place on top to flip the tortilla into before sliding back into the pan. (This is the tricky part so watch some videos to see the technique) Cook the other side for 2-3 more minutes and let cool. Serve at room temperature or refrigerate overnight and reheat for breakfast 🍳 😋
