Vegan meatballs in sweet and sour sauce

I wanted to do something different with what I had at home so I made this really yummy meatballs in sweet and sour sauce.

I used premade vegan meatballs I bought the other day from Aldi and when I was looking for something other than spaghetti I saw this recipe that used pineapple. I had a can of pineapple ready to go so it was a no brainer!

I cooked red onions, mushrooms and carrots thickly chopped in olive oil for a few minutes. I used the juice from the can of pineapples and added some water to make it a half cup. I added about 1/4 cup soy sauce and a tablespoon of flour and whisked it together before adding it to the veggies and pineapple.

I let that simmer for 10-15 minutes with a lid and added the meatballs for another 10 minutes.

I served it with rice and it was even better than I had hoped!
