Vegan sweetpotato, squash and black bean Enchilada
Another recipe from Thug Kitchen and I have to say this one is my new favorite!

I used the leftover black beans from the torta recipe which made this even more simple to make.
First, I made the enchilada sauce by combining 2 cups of veg broth, 1/3 cup of tomato paste, 2 Tbs chili powder, 2 tsp cumin, 1 tsp oregano, 3 cloves of minced garlic, and 2 tsp tamari.

I let that simmer for 15 minutes while I cooked the diced sweet potatoes in a little water. I fried half an onion in olive oil, and after a few minutes I added the grated squash. I added more fresh garlic, cumin, salt and chili powder and the soften sweet potatoes and black beans.

Next I added some of the sauce in the bottom of 3 glass tupperwares and used some flour wraps to make the enchiladas with the filling. I folded them and placed them inside the baking dishes and topped them with the rest of the sauce. Finally I added some of the leftover vegan Parmesan I had and covered the in foil to bake for 20 minutes. I uncovered them for an extra 5 minutes in the oven before serving them.
🌟 Overall rating: 11/10: I have made enchiladas before but this was my first time making them vegan and with homemade sauce. Color me impressed because this was such a delight I will definitely be making this again!
