Vegan Ube Cookies 🍪🌱

I bought some Ube or purple yam powder to make colorful and tasty treats. These vegan cookies didn’t quite turn out as purple as I’d hope but they are delicious nonetheless.

1 cup coconut oil

1 cup sugar

2 tbsp chia seeds reconstituted with 9 tbsp water

2 1/4 cup all-purpose flour

1/2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

2 tbsp ube (purple yam) powder

Preheat oven to 350, mix the coconut oil and sugar together till smooth and add the chia seeds. In a separate bowl mix the flour, baking powder, baking soda and salt. Combine the two mixtures, I added a few tablespoons of soy milk bc it looked a little dry. Next I put some sugar and cinnamon in another bowl to roll 2 inch balls of cookie dough and add to the baking sheet.

They baked for about 10 minutes and I tapped them on the counter and put them back in for another minute. I let them cook on a make shift rack.

They were really nice but I would suggest to grind or rehydrate the chia seeds for longer.
