The power went completely out for a whole day in Spain! It was really scary especially at the point even cell service went completely down. I kept myself busy since there wasn’t much I could do without power so I made this no-bake shortcake 😗🍰
🌟 Ingredients 💫
Crust: 3/4 cup of crushed cashews, 1/4 almond flour or oats, 4 dates, 2 Tbsp coconut oil, and a pinch of salt
Filling: 2 cups cashews soaked for a few hours, 1/2 cup coconut 🥥 milk, 1/4 cup coconut oil, 1/3 cup maple syrup 🍁, 2 tbsp lemon juice 🍋, and 2 cups of strawberries 🍓 halved.

To make the crust use a blender to combine all the ingredients (I used a potato masher 🥲) Press the mixture on the bottom of a lined pan and press smooth. Next for the filling purée all the ingredients except the strawberries. Pour that over the crust and press the strawberry halves over the top. Chill to let set for at least a few hours. I added an extra layer of strawberries and some chia seeds for good measure.

This is really nice and healthy treat, of course it would be a lot easier to make with a blender or food processor than by hand 😅 I like how it’s not overly sweet but if you like it sweeter you can always add some more liquid sweetener like maple syrup or whatever you prefer.

To achieve a stunning fanned look, slice the strawberry from the top almost all the way to the bottom, but leave the very base intact. Then, gently press down on the top to fan out the slices. This technique is absolutely gorgeous for garnishing the finished no-bake 'cheesecake' – it adds that gourmet touch without much extra effort!
