No-Bake Nut Butter Chocolate Truffles

I made these tasty no-bake peanut butter chocolate truffles today. It’s been so hot lately and even the thought of turning the oven on makes me feel hotter. 🌞

I found this recipe in my 100 best vegan recipes book.

It calls for almond butter but I have creamy peanut butter that my husband won’t eat (he likes crunchy) so this was a good way to use it up.

I also didn’t have any whole almonds to crush up for rolling so I substituted with cashews.

Ingredients:

1 cup chocolate for melting

1/2 cup nut butter

2 Tbsp non dairy milk

1 Tbsp vanilla extract

1 cup confectioners sugar (I used regular sugar in pulverized in a blender)

2 Tbsp cocoa powder

1/2 cup ground nuts

Directions:

Melt the chocolate in a bowl in the microwave on low heat until just melted. Blend the nut butter with milk and vanilla. Next add the sugar, cocoa powder and melted chocolate till smooth. I added a touch more milk to make it stickier. Let it chill for 30 minutes before rolling in chopped nuts of choice.

Store in the fridge because these are delicious especially when chilled!
