Easy peasy vegan lasagna

I’ve been meal prepping more often since my hubs is working and studying full time. I’ve been there done that so I know how difficult it can be. One meal I love to make is lasagna since it is a big dish that can last for several days.

To make this recipe as quick and simple as possible I use oven ready lasagna noodles. For the veg I slice up what I have on hand- an eggplant 🍆 zucchini and some peppers 🫑🌶️ and roasted them in an oven while I fixed the rest of the filling. The sauce I make quickly with some diced onion 🧅 and a can of tomato sauce 🥫 with a bit of salt 🧂 and Italian seasonings.

For the ricotta I mix tofu and half a cup of blended cashews with some sautéed mushrooms 🍄‍🟫 and spinach to give it some extra veggie goodness.

Next, layer the sauce, noodles, veg and tofu mix up to the top of the baking dish and cover. Bake for about 30 minutes and uncover for 10 to get it crispy on top.
